This week the Burger Chase has brought us to a really niche little spot in Spring, TX called the Thistle Draftshop. I'll have to admit, from my first glance at this place, I was a little skeptical of if they would be able to deliver on a good burger, because it seemed like one of those places that were just focused on their craft beers and they just "had food" just to have it there. But I was proven WAY wrong. The burgers here are great.
I apologize ahead of time, because I forgot to get a picture of the burger I actually had, so I had to use one that I found online, but rest assured, the burger looks just as good as the one they used for the marketing pic above.
Now I am not a big fan of bleu cheese, so I actually had my burger without it, but I am not letting that factor into the score, but who knows, maybe they have awful bleu cheese and it ruins the burger completely, but I cannot say. I did have the smoked habanero bacon (cooked a little crispy, of course) and it was great. The flavor and spice on it was a great kick to the burger and delivered everything I would want from bacon. The caramelized beer onions were also very good, I would say they were in the upper tiers of some of the caramelized onions that I have had lately. I honestly did not taste very much garlic ailoi (compared to a couple weeks ago when it was caked on to my burger) so it was interesting, but I think I would have enjoyed having a little bit more on it.
The meat was great. It was juicy and I could taste a very flavorful seasoning on it. It crumbled apart and wasn't too chewy, and had a little bit of pink and wasn't overly charred anywhere.
The bun was somewhat interesting as pictured above. It didn't fall apart from the juices and grease from the burger so that's a big plus, and it tasted like it was buttered pretty well making it a very flavorful piece of bread.
I don't have many complaints about this burger beyond the aioli, except the size of the burger. The burger I received was very small and for a $12 burger, I would have enjoyed to be a little more full from it, but it does seem like this establishment focuses more on quality of food than quantity, which you can't hate on when you're looking for a good burger.



VERDICT: 4 out of 5 Stars.
